Following the success of our last International Feast, co-hosted by our Nigerian residents, we’re excited to continue fostering cultural connections in 2025. Our Last International Feast: A Nigerian Delight
One of the highlights of last year’s events was our International Feast, where our Nigerian residents treated us to a mouth-watering spread featuring the famous Jollof Rice. The rich aroma of tomatoes, spices, and slow-cooked rice filled the air as students gathered to enjoy this West African favourite. The event was a true testament to the power of food in creating bonds and fostering friendships.

A Taste of Home: How to Make Jollof Rice
Want to bring a little taste of home to your new kitchen? Here’s a simple recipe for Jollof Rice that’s easy to make and perfect for sharing with friends.
Ingredients:
- 2 cups long-grain parboiled rice
- 1 can (400g) chopped tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 scotch bonnet pepper (optional, for heat)
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Vegetable oil
Instructions:
- Heat a few tablespoons of vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and peppers, and sauté until softened.
- Stir in the chopped tomatoes, thyme, curry powder, paprika, and ground ginger. Cook for a few minutes until the tomatoes soften and the spices become fragrant.
- Add the parboiled rice to the pot and stir until well coated with the tomato mixture.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
- Fluff the rice with a fork, adjust seasoning with salt and pepper, and serve hot!
